It is peach season and around here that means peach cobbler. I love how simple it is. I used fresh Georgia peaches and enhanced the flavor with cloves and cinnamon. The topping is a simple oatmeal crisp crumble. You can double the topping recipe if you like a thick layer of crisp. Serve warm with a big scoop of vanilla ice cream. I guarantee this dessert won't last long.

Ingredients
- 4 fresh, large peaches, peeled and large diced
- ¼ c. all-purpose flour
- ¾ c. sugar
- ½ teaspoon cinnamon
- ¼ teaspoon ground cloves
Topping
- ½ c. rolled oats
- ¼ c. packed brown sugar
- ¼ c. all-purpose flour
- ¼ teaspoon cinnamon
- ¼ c. cold butter
- Vanilla ice cream
Instructions
- Preheat oven 375 degrees.
- In a medium bowl, combine the flour, sugar, cinnamon and ground cloves.
- Stir until well combined.
- Toss in diced peaches until well coated.
- Turn the filling into a 9" x 9" baking dish.
- For the topping, combine the oats, brown sugar, flour, and cinnamon in a medium bowl.
- Cut the butter in until the mixture resembles coarse crumbs.
- Evenly crumble over the top of the filling.
- Bake 30-35 minutes or until the topping is golden brown and the filling is bubbly.
- Serve hot with a scoop of vanilla ice cream.
