Peach Cobbler a la Mode

It is peach season and around here that means peach cobbler.  I love how simple it is.  I used fresh Georgia peaches and enhanced the flavor with cloves and cinnamon.  The topping is a simple oatmeal crisp crumble.  You can double the topping recipe if you like a thick layer of crisp.  Serve warm with a big scoop of vanilla ice cream.  I guarantee this dessert won't last long.

Peach Cobbler

Total Time: 1 hour 5 minutes

Ingredients

  • 4 fresh, large peaches, peeled and large diced
  • ¼ c. all-purpose flour
  • ¾ c. sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground cloves

Topping

  • ½ c. rolled oats
  • ¼ c. packed brown sugar
  • ¼ c. all-purpose flour
  • ¼ teaspoon cinnamon
  • ¼ c. cold butter
  • Vanilla ice cream

Instructions

  1. Preheat oven 375 degrees.
  2. In a medium bowl, combine the flour, sugar, cinnamon and ground cloves.
  3. Stir until well combined.
  4. Toss in diced peaches until well coated.
  5. Turn the filling into a 9" x 9" baking dish.
  6. For the topping, combine the oats, brown sugar, flour, and cinnamon in a medium bowl.
  7. Cut the butter in until the mixture resembles coarse crumbs.
  8. Evenly crumble over the top of the filling.
  9. Bake 30-35 minutes or until the topping is golden brown and the filling is bubbly.
  10. Serve hot with a scoop of vanilla ice cream.
