How to Break Down a Chicken

There are many skills that we learn here on the farm, but none are as useful as knowing how to break a full chicken or duck into individual cuts.  We will typically break down the chickens we butcher before canning or freezing them.  Even when we buy chicken from the store, I will often buy a whole bird and break it down as a way to save money.  If you plan your menu ahead of time, you could plan one meal for chicken breast, another for legs and thighs and another for wings and drummies.  You could even make stock with the leftover carcass to be used for soup, mashed potatoes or stuffing.
